¼cupmustard(I like stone ground, such as Thrive Market’s)
¼cuporganic, unfiltered apple cider vinegar*(such as Bragg's)
¼cupextra-virgin, cold-pressed olive oil
1-2tbsppure maple syrup(or honey)
1tspground turmeric
several grinds of fresh black pepper
1-2tbspwater
1large garlic clove, pressed(optional)
sea salt to taste
Instructions
Add all ingredients except the water to a jar or container with a tight-fitting lid, put the lid on and shake it until well mixed. I love this Oxo Shaker. (You can also whisk it, or pulse it a few times with an immersion blender or in a regular blender.) Add about a tablespoon of water at a time as needed to thin it out (this will depend on your mustard and preference). Add salt and/or more maple to taste.
Dressing keeps well in the fridge for up to two weeks (shake it up again each time you use it).
Notes
Use any type of mustard you like but just make sure there's no added preservatives, sugar, or artificial colors or sweeteners. Real honey is fine (skip the maple because it'll be plenty sweet), but double-check the ingredient list because they'll usually sneak other sweeteners in there, too.
